Instructions

Prepare the Chicken Skewers

  • In a large bowl, mix together the olive oil, chopped shallot, garlic, dried oregano, chipotle chili powder, honey, harissa sauce, lemon zest, salt, and pepper.
  • Add the chicken chunks to the marinade, stirring to ensure they are evenly coated. Marinate for at least 10 minutes.
  • Preheat your oven to 450°F (230°C).
  • Thread the marinated chicken onto skewers, leaving space between each chunk.
  • Place the skewers on a baking sheet lined with parchment paper and bake for 20-25 minutes until chicken is cooked through.

Make the Feta Fries

  • Cut the russet potatoes into 1/4-inch matchsticks.
  • Toss the potatoes with olive oil, garlic powder, cayenne pepper, and salt.
  • Spread the seasoned potatoes on a baking sheet and roast for 15-20 minutes, flipping halfway.
  • Combine mixed herbs, grated garlic, lemon zest, toasted sesame seeds, and crumbled feta cheese in a bowl.
  • Once the fries are crispy, sprinkle the herb and feta mixture over them and toss gently to combine.

Serve

  • Plate the chicken skewers alongside the crispy herb feta fries.
  • Serve with tzatziki and garlic tahini on the side.

Notes

For best flavor, marinate the chicken longer than 10 minutes. Use wooden skewers soaked in water to prevent burning.
