Instructions

Preparation

  • In a small bowl, combine the softened butter with the minced garlic if you’re using it. Spread this mixture on one side of each slice of bread.
  • Heat a small pan over medium heat. Add the diced bell peppers with a pinch of salt and pepper. Sauté for about 2 minutes until the peppers soften slightly.

Assembly & Cooking

  • On a clean cutting board, place two slices of bread with the buttered side down. Layer on half of the shredded cheese, followed by sautéed bell peppers and chopped parsley. Top with the remaining cheese and close the sandwich with the other two slices of bread, buttered side up.
  • Preheat a non-stick skillet or griddle over medium heat. Place the sandwich onto the skillet and grill for 3-4 minutes per side, pressing gently with a spatula until the bread is crispy and cheese is melted.
  • Once cooked, slice the sandwich in half and serve it warm.
