Instructions

Preparation

  • Blend the feta cheese, cream cheese, olive oil, garlic powder, lemon zest, and black pepper in a food processor until smooth and fluffy.
  • Gently stir in the sun-dried tomato pesto and chill for about 15-20 minutes.
  • Roll out the thawed puff pastry sheet on a floured surface and cut into a large circle or square.
  • Spoon the feta mixture into the center of the pastry, fold it around the filling to form a sealed dome.

Baking

  • Place the bomb seam-side down on a parchment-lined baking tray. Brush with the beaten egg wash and drizzle with olive oil or melted butter.
  • Bake in a preheated oven at 200°C (400°F) for 22-25 minutes until golden brown.

Serving

  • Allow to rest for 3-4 minutes before slicing open to reveal the sun-dried tomato core.
