Ingredients

Puff Pastry Base

  • 2 sheets puff pastry (thawed if frozen) Ready-made, buttery, and flaky.

Whipped Feta Filling

  • 150 g feta cheese Creamy and tangy.
  • 2 tbsp cream cheese or Greek yogurt Adds richness and smoothness.
  • 1 tbsp olive oil Enhances flavors.
  • 50 g sun-dried tomatoes, finely chopped (oil-packed, drained) Contributes sweet and tangy dimension.
  • 1 tsp dried oregano or thyme Aromatic herbs.
  • 1 egg for egg wash Ensures a golden finish.

Hot Honey Center

  • 4 tbsp honey Sweet and sticky.
  • 1/2 tsp chili flakes or hot sauce Infuses honey with heat.

Toppings

  • optional pinch of salt To taste.
  • to taste sesame or nigella seeds For topping.
  • to taste fresh thyme leaves For garnish.
  • to taste flaky sea salt To elevate the dish.

Instructions

Preparation

  • Preheat oven to 200°C (400°F) and line a large baking tray with parchment paper.
  • In a mixing bowl, blend the feta, cream cheese, and olive oil until smooth. Stir in the sun-dried tomatoes and herbs.

Assemble

  • Roll out both puff pastry sheets into equal circles. Place one on the tray with the whipped feta mixture spread evenly, leaving a 1.5 cm border.
  • Top with the second circle and cut 16 strips from the center radiating outwards, twisting each to form petals.
  • Brush the pastry with beaten egg and sprinkle with sesame or nigella seeds.

Bake

  • Bake for 20 to 25 minutes until puffed and golden brown.
  • In a small saucepan, warm the honey and stir in chili flakes or hot sauce for the hot honey.

Serve

  • Once baked, place the bowl of hot honey in the center of the flower and garnish with fresh thyme leaves.

Notes

Ensure puff pastry is chilled before use. Blend the feta mixture thoroughly to avoid lumps. Enjoy as a stunning appetizer for any gathering.
