Ingredients

For finishing touches

  • 3 tbsp Walnut Halves, toasted Adds crunch and nutty flavor.
  • 1 1/2 tbsp Hot Honey (or honey + pinch of chili flakes) Provides subtle sweetness with heat.

Instructions

Preparation

  • Preheat your oven to 200°C (390°F).
  • In a medium bowl, toss the red seedless grapes with 1 teaspoon of olive oil and a pinch of salt. Spread them evenly on a baking sheet.
  • Roast for 15-18 minutes, or until the grapes are blistered and juicy.
  • While the grapes are roasting, combine the feta cheese, Greek yogurt (or sour cream), lemon juice, 1 tablespoon of olive oil, and cracked black pepper in a blender. Blitz until smooth and fluffy.
  • In a dry pan over medium heat, toast the walnut halves for about 3-5 minutes until fragrant.

Assembly

  • Spoon the whipped feta into a shallow bowl and spread slightly.
  • Top generously with roasted grapes and scatter the toasted walnuts over the top.
  • Drizzle hot honey across the dish and optionally garnish with fresh thyme or chili threads.

Notes

Ensure feta is at room temperature for smoother texture. Keep an eye on roasting grapes to avoid dryness.
