Instructions

Roasting the Strawberries

  • Preheat your oven to 375°F (190°C).
  • In a medium bowl, toss the hulled and halved strawberries with balsamic vinegar, honey, and a pinch of black pepper.
  • Spread the mixture evenly on a parchment-lined baking sheet.
  • Roast for about 15-20 minutes, or until softened and caramelized. Remove from the oven and set aside to cool.

Making the Whipped Feta

  • In a food processor, combine the crumbled feta, softened cream cheese, olive oil, lemon juice, and black pepper.
  • Pulse until smooth and creamy, scraping the sides as necessary. For a looser texture, add a bit more olive oil.

Assembling and Serving

  • Spread the whipped feta on a clean plate or bowl in a circular swirl.
  • Spoon the roasted strawberries generously over the top.
  • Drizzle a bit more olive oil and sprinkle with chopped basil or mint leaves.
