Strawberry Filling

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and prepare baking sheet lined with parchment paper.
  • Cut each thawed puff pastry sheet into three equal rectangles.
  • Place the pastry rectangles on the prepared baking sheet, pricking them all over with a fork.
  • Brush the tops lightly with a beaten egg to achieve a golden color.
  • Bake for 12–15 minutes, until the pastries are puffed and golden brown.

Mousse Preparation

  • Let the layers cool completely and dust lightly with powdered sugar.
  • Melt the chopped white chocolate gently using a double boiler or microwave and let cool slightly.
  • In a separate bowl, whip the heavy cream with vanilla and a tablespoon of powdered sugar until soft peaks form.
  • Fold the cooled white chocolate into the whipped cream until smooth.
  • Chill the mousse for about 20 minutes to set slightly.

Assembly

  • Place one puff pastry layer on a serving plate and pipe or spread mousse over it, topping with sliced strawberries.
  • Repeat with remaining pastry layers, mousse, and strawberries. Finish with a final layer of mousse and optional white chocolate shavings.

Notes

Ensure your pastry is cold when handling to maintain flakiness. You can add lemon zest to the whipped cream for extra flavor, and use store-bought chocolate mousse for an easier version.
