Instructions

Preparation

  • Preheat your oven to 425°F (218°C).
  • Line a baking sheet with parchment paper.
  • Slice zucchinis into 3-inch long, 1/2-inch thick strips.
  • Beat the eggs in a bowl with a pinch of salt and ground black pepper.
  • In a separate plate, mix panko bread crumbs and grated Parmesan cheese.

Coating

  • Dip each zucchini strip in the egg mixture, then coat with panko-Parmesan mixture.
  • Arrange coated zucchini strips on the baking sheet in a single layer.

Baking
