Ingredients

For the Zucchini Rounds

  • 2 medium zucchinis, sliced into 1/4-inch rounds Ensure even slicing for better cooking.

For the Almond Thyme Honey Drizzle

  • 1/4 cup honey Natural sweetener for drizzle.
  • 2 tablespoons sliced almonds, toasted Adds crunch.
  • 1 teaspoon fresh thyme leaves Imparts aromatic essence.
  • 1/4 teaspoon crushed red pepper flakes Optional, for a hint of spice.

Instructions

Prepare the Zucchini Rounds

  • Preheat a grill pan or skillet over medium heat.
  • Brush both sides of the zucchini slices with olive oil and season with sea salt and black pepper.
  • Grill the zucchini for about 2 minutes per side until tender and slightly charred.

Make the Almond Thyme Honey Drizzle

  • In a small saucepan, gently warm the honey over low heat until warm but not boiling.
  • Stir in the toasted almonds, fresh thyme leaves, and optional crushed red pepper flakes.
  • Simmer for about a minute and then remove from heat.

Assemble the Zucchini Stacks

  • Spread a thick layer of goat cheese onto half of the grilled zucchini rounds.
  • Stack another zucchini slice on top of the cheese-covered rounds, repeating the process to create 2 or 3 layers.
  • Drizzle the warm almond thyme honey over the top of the stacks.

Serve & Enjoy!

  • Garnish with extra thyme leaves and toasted almonds.
  • Serve warm or at room temperature.

Notes

For added flavor, grill zucchinis over charcoal. The almond thyme honey drizzle can be made in advance and stored. Consider adding roasted bell peppers or tomatoes for more color and taste.
